Weekend Project: Coconut Yogurt

Sticker shock is normally something we think of in regards to concert tickets or apartments in neighborhoods that used to be dumpsville. Imagine our shock, suprise, awe, when we realized that the super-delicious coconut yogurt we tasted at a friend's house last week costs, wait for it.........$12. Now, don't get us wrong: it tasted so delicious, and we've no doubt that it is made with integrity and wholesome ingredients and is worth every penny. But still, as some like to say. That's a whole lotta money for yogurt. Which got us thinking: could we make delicious dairy-free yogurt at home? Turns out the answer is a resounding yes, and that in a few short hours you can have your own deliciously decadent coconut milk yogurt ready to eat. This recipe is extremely straightforward, and we do like the note about refrigerating overnight to yield a super creamy cap of coconut cream and scrapping the use of thickeners (this also takes the price down since you don't need the tapioca starch or agar agar). On top of pancakes or beside a creamy pumpkin tart, this yogurt is the stuff of dreams. 

Dairy-Free Coconut Yogurt

Ingredients
2 (14-ounce) cans coconut milk
2 teaspoons agar agar flakes, or 2 tablespoons tapioca starch (see Recipe Notes)
4 probiotic capsules, or 4 tablespoons store-bought coconut yogurt
2 tablespoons raw sugar or maple syrup, optional

Equipment
Glass jars with lids, for storing the yogurt
Measuring spoons
Medium saucepan
Whisk
Thermometer, optional
