When in season, snap peas are an addictive snack, offering crunch, sweetness, and just enough fresh, juicy green flavor to almost quench your thirst on a hot day. They're incredibly yummy to eat raw, straight out of the bag from the farmer's market, or dipped into any variety of condiments: hummus, yogurt dip, aioli. Slivered, they offer a nice bite to leaf salads or coleslaws. While there are so many ways to nosh them raw it might seem crazy to ever cook them, this recipe, which showcases their delicious mellow sweetness, calls for a quick blanch, just to take the edge off of their stringy crunch. Pairing them up with mint is a summertime combo that we will never tire of, but the addtion of Meyer lemon, with its gentle, floral acidity, really takes it to the next level. It's the perfect lunchtime salad, bracing and sweet and herbaceous all at once. 

Snap Peas with Meyer Lemon and Mint

Serves 4

1 pound snap peas, trimmed

1 tablespoon Meyer lemon juice

1 teaspoon Meyer lemon zest

3 tablespoons extra virgin olive oil

1 teaspoon minced shallot

1 tablespoon chopped mint leaves

Salt and freshly ground pepper, to taste
