Dairy-Free Digest: Make Your Own Coconut Milk

Make Your Own Coconut Milk
Coconuts are really having their day in the sun. There's oil, water, and then there's the milk.
Coconuts are a superfood, in case you didn't know. That means they're packed with beneficial fatty acids that improve heart health and strengthen bones. It works to keep you full, so you’re not reaching for that stash of candy in your desk drawer at 4 p.m. (yep, guilty!). That means coconut milk is good for you too!
One of the best ways to drink the hair-nourishing beverage is as a latte—vegan of course. It's as simple as adding coffee, cinnamon, and coconut flakes, and voila! Follow the easy recipe below.

Homemade Coconut Milk

Makes 4 cups

  • 2 cups shredded, unsweetened coconut
  • 4 cups water
  • 1 tsp vanilla (optional)
  • 4 pitted medjool dates (optional)
  • Pinch sea salt (optional)

  1. In a blender, place ingredients on medium speed for 2 minutes or until milk is creamy. Depending on how you want your milk to taste you can add the sweeteners like the vanilla, medjool dates or sea salt. There should be no signs of shredded coconut.
  2. Line a strainer with a cheesecloth or a mesh coffee filter to drain the milk.
  3. Transfer to serving glasses and can be served up to 3-4 days after making.
Convinced yet? Go ahead and test-drive the homemade milk recipe into your daily routine!
