Buff Bake: Pumpkin Bundt Cake

What if we told you there was a way to add protein to your guilty pleasure morning muffin — making it not only delicious, but also nutritious?

The ladies behind Buff Bake, a delectable range of almond and peanut butters infused with superfoods like chia, flax seeds and whey protein, have tinkered around in the kitchen for countless hours to create their signature blends. What started as a plea for help has turned into a full-fledged international business: Ashley Boeckle, bikini contest competitor and fitness freak, just knew her cousin Brittany Boeckle (a whiz in the kitchen) could help her create a training treat that would taste amazing but not lead her diet astray.

What came next was Buff Bake, phase 1: the "buffin." Brittany's protein-packed muffins were just the thing to stave off a sweet tooth and provide a much-needed boost of energy. They became a coveted treat at the farmer's market, but it soon became clear that baking the goods on a commercial scale just wasn't going to work. After going back into the kitchen to re-work their concept, the cousins realized that what they really needed to do was create a packaged product that would offer all the delicious, good-for-you qualities of the buffin, but with a longer shelf life.

With a base of peanut or almond butter, Buff Bake flavors like Snickerdoodle or Coffee Bean bring big flavors to the spreads, which are loaded with natural whey protein — bringing the total to 11 grams of protein per serving, beating out many protein bars on the market. Chia and flax seeds add Omega-3's and antioxidants, upping the nutritional value of every spoonful.

Spread on toast or swirled into oatmeal, Buff Bake is a spread with a brand-new spin. The spreads also bake incredibly well, hence the name: Recipes for muffins, cakes, and pancakes are mouth-watering, including one for a pumpkin spice bundt cake, which incorporates their seasonal Pumpkin Spice flavor. They were kind enough to share it with us, so if you're looking for a way to prep for a super-healthy Thanksgiving, this is it. 

Buff Bake Pumpkin Spice Bundt Cake


4 scoops vanilla protein powder

1/2 cup coconut palm sugar

2 tbsp pumpkin pie spice

1 tbsp cinnamon

1/2 tsp baking powder

1/4 cup almond flour

1/4 cup oat flour

1 cup pumpkin purée 

1 egg

1/4 cup egg whites

1/4 cup Pumpkin Spice BuffBake

1 cup almond milk

2 tbsp coconut oil 


1. Preheat oven to 350°F. 

2. In a large bowl, combine all the ingredients and mix until smooth. 

3. Spray a mini bundt cake pan and pour the batter into each mold. 

4. Bake for 23-25 minutes or until a toothpick comes out clean. Let cool. 

5. Flip them out and top with a cream cheese icing made by combining 4oz low fat cream cheese, 1/4 tbsp almond milk, 1/4 cup zero calorie sweetener, 1/2 tsp vanilla extract and 1/2 scoop vanilla protein powder. 

6. Top with more Pumpkin Spice BuffBake and enjoy.
